Gluten-Free Treat Idea: Rickaroons: Enjoy Your Sweet Treats without Guilt [Review + Giveaway]


A few weeks ago, I had the chance to try out some amazing macaroons by this place called, "Rickaroons" and I can't wait to tell you about it. It started by a guy going gluten-free who wanted a cookie too. I totally have been there! And he also wanted to make the gluten-free treat pretty healthy too. And that's not an easy balance to find. Rickaroons are a flourless experience, which I prefer in my gluten-free treats. I also am so loving the macaroon experience of these treats as well and I think it's something you can buy without feeling guilty at all!

I had the chance to try a variety of flavors - Chocolate Blonde, Mint to Be, Mocha and Megaroon. I have to say that of all the flavors I tried, my favorite is a toss up between Mocha and Mint to Be. I love the zing of coffee mixed in with the mocha flavor but I love the spark of mint mixed with the chocolate of Mint to Be. The texture to the "Rickaroons" are a little grainy but I think it matches the unique quality of the cookie.

One thing that makes me really enjoy these cookies are their simple ingredients. Here's what's in the Mint to Be -

 Shredded Coconut, Almond Butter, Coconut Palm Nectar, 70% Dark Chocolate (Cacao, Cane Juice, Chocolate Liquer, Cocoa Butter, Tapioca), Cacao, Coconut Oil, Vanilla, Peppermint Extract

Can I just say that I'm REALLY happy to see that there is 70% Dark Chocolate in this? I'm so happy about that. I love all the great ingredients here - that's HUGELY important to me. Rickaroons take great care in their ingredients too and you cann tell when you see which ingredients they choose and what is so healthy about them - read about it here.

The Best Gluten-Free Soup I've Had in a Long Time (And Giveaway]

​​​​​​​​ Since I've been gluten-free it isn't always to figure out easy lunch solutions. I'm not a huge fan of frozen options and I really don't think I've found the perfect, consistently amazing lunch time bread. And soups? Well, I haven't found my favorite soups yet either. Until now.
So I had the chance to try out Blount's Soups! I tried two different kinds -

Here's what I thought:
The Good:
Theses soups are non-gmo, organic, and gluten-free. First, the tomato bisque. I found this tasted so good. I like when Tomato Soup is on the creamy side. And this was! I'm never a fan when tomato soup has more of a ketchupy, liquidy tomato flavor. But when it really tastes like a soup? Oh yum! 
For the Broccoli Cheddar, it may not have been as thick and creamy and cheesy as I usually love about Broccoli Cheddar, it was still really tasty. I just needed a bit more salt.

I'm always on the organic route when I go into a grocery store, but I have only just recently heard that we really should be drinking organic coffee. I never really thought of this before and didn't realize the importance of choosing organic coffee until now.
