My Favorite Gluten-Free Muffin Recipe [Featuring Bob's Red Mill!] [& Giveaway!]


I really don't think you can miss Bob's Red Mill. I mean, check out the length of their section in my local Whole Foods store. For me, Bob's Red Mill is a brand I wholly trust and know that I can go to for some pretty fantastic gluten-free options.

A few weeks ago I shared with you one of my favorite muffin recipes and I decided to modify it a bit by adding in a new aspect - flax seeds!It was a bit awkward in experience but it made the muffins taste amazing. 

I have been using Bob's Red Mill Gluten-Free oats for MONTHS now, actually more than likely about a year. They're one of my favorites - I love the bag size and I love that you can trust them for gluten-free products.

For me when I'm using gluten-free oats as a flour, I grind up the oats myself with a coffee grinder. I recently used their already ground gluten-free oat flour to go with fried chicken and that turned out pretty amazing! I was so happy about that!  

So one of the things I love doing is making oat muffins. It started out after my boredom with oatmeal and after hunting around online I realized that I couldn't find any recipes that just used...oats. So this one does and I modified it a bit to consider the whole flax seed thing! If you don't like flax seed though, check out my original and STILL amazing recipe over here.

What you'll need for this most amazing recipe -

2 and a 1/4 cup of Bob's Red Mill Gluten-Free Oats (you can grind them yourself OR just use their already ground oat flour)

1/4 cup of Bob's Red Mill Whole Flax Seeds (again, grind them yourself OR just get their already ground flax meal)

1 cup and 1/3 of Soy Milk (or I will often use half and half)

2 TBSP of Butter (or Olive Oil)

2 TBSP of Cinnamon

1/2 TSP of cream of tartar

1/4 TSP of baking soda

1/2 TSP of Salt

1 large egg

1/4 cup of honey (I will let you be the judge of this; if you like muffins extra sweet, I would add a bit more! If you don't want them so sweet, I would use less). 

1 TSP of clovers (optional)

1/2 TSP of Vanilla Extract (optional)

Suggestion: Add mix-ins of your choice such as raisins, cranberries, dark chocolate pieces. 

Preparation:

Preheat the oven to 350. I ground up the oats myself using a coffee grinder and then from there I measure out 2 and 1/4 cup of oats. I always start out with the dry ingredients first so add those in (except any added mix-ins), followed by the milk, the egg, the butter, and lastly the honey. Lastly add in your ground flax. 

Mix well with a mixer. Then fold in your mix-ins last.

Spray the muffin tin with Pam spray or line it with muffin cups.

Quick Hack! I personally LOVE aluminum lined muffin tins. They are a must-have. 

Pour the mix into a muffin tins.  

Quick Hack! For me, when I'm distributing a muffin mixture into muffin tins, I like using an ice cream soup! Saves me from making a mess. 

The consistency should be pretty thick. This batter should make 9 - 12 muffins.

Bake for 25 minutes.

NOTE about the Flax - I got whole flax seeds and ground them myself. I wasn't sure how much to use in all honesty so I researched on line and went with trading in a 1/4 a cup of flour to a 1/4 a cup of ground flax, which is what I did.

When I ground up the flax, I added it in right after the oats, then I usually add the rest of the dry ingredients, then the wet ingredients, and then mix. I noticed though that the flax made the whole mixture very sticky, very fast. I think next time, I'll measure things out first THEN I'll add the flax seed. When you add flax seed it adds a heartier flavor to it. And as you can see, they end up looking amazing too.

They have a million different kinds of flours and mixes and all kinds of things that you can use. It's my go to brand and one I completely trust to provide an excellent product.
