Excellent Tasting Coffee in Time For Mother's Day [Review + Giveaway]

I had the chance to review some really tasty coffee by one of my favorite coffee companies - Weaver's Coffee & Tea! I've reviewed some of their coffee before and I am always so pleased.

What will you be doing this Mother's Day? I don't know about you but I tend to go for the 'at home' celebration and so if that's the type of celebration you will be doing, make sure you select an excellent coffee to go with your breakfast. And the specific blend that I got to try makes an excellent choice!

Drink Some Good Coffee by Aroma Ridge [Review and Giveaway]

I'm such a coffee fanatic, and I love when I get the chance to review some. So this great company Aroma Ridge started about 20 year ago as a family owned business. It's blossomed since then and offer some of the best coffee across the country.

I had the chance to try their Mama's Roast Coffee, it's a bold blend, which I really appreciate. I loved the color of the beans when I opened up the bag, they were definitely dark and they had such a wonderful strong smell.

I made a cup for the morning and YUM this stuff is so good. It hasn't a mild sweet taste but definitely a bold coffee. It runs about $13.95 for a 1 lb bag and I think that's a pretty decent price. Check it out here.

One Thing You Didn't Realize You Needed #SolarEnergy #EarthMonth

Whenever I hear things like "solar energy" I think that it's something that the bigger corporations and big cities worry about or can use. I never think that solar energy was possible for me, in my own apartment. I recently learned of a solar powered back up portable generator that turns my whole way of thinking around. Also it's a perfect time to talk about this considering the fact that April is #EarthMonth!

Everyone, meet the Lycan Powerbox. 

It's one of the things you never knew you needed and you will be very glad you purchased. Summer of last year made me think about what my options are during a heat wave if the power goes out? First of all, I don't have a car, and also, I live at the top of a hill. So I don't have quick access to air conditioning or a way to get to air conditioning. But I've been concerned because I'll need a fan on AT LEAST. Will I just wait and hope for the best? For me, and my mom, we both have a heat sensitivity and last year was one of the hottest I've dealt with so far, so I know I've had to do something about this.

With the Lycan Powerbox, I have options. It's portable and not as heavy as you might envision - about 60 pounds or less. You charge from a solar panel or wall outlet and it's ready to go for up to 900 watt-hours. THAT is pretty amazing. If you are heavily into the outdoors and camping, I think this is an incredible thing to purchase. It also has a interchangeable battery so you can keep the energy going just by replacing the battery. Be prepared to either need to get solar panels in order to charge by the sun OR be willing to plug this into an outlet.

The price in my book is a bit steep, but it's worth consideration. I've long since known that I need to be more prepared in case of emergency and portable solar energy is one of those things one the list. Gluten-Free Food Ideas: Botticelli Foods - A Very Tasty Pasta Sauce to Try - My New Favorite! [My Review]

When it comes to pasta sauce, I don't see myself as being that demanding but when it comes right down to it, sometimes the simplest requests are hard to come by. And then I feel really lucky when I find a pasta sauce that hits the mark! So I had the chance to try out this very good Marinara Pasta Sauce by Botticelli Foods lately and I loved it!

Just take a look at this -

Doesn't this look amazing? Well you know how I said that I have a few reequsts when it comes to pasta sauce? First I like choosing pasta sauce that doesn't have sugar in it. AND I like the sauce being a deep dark rich red. Both of these were qualities of the sauce I had the chance to try. It had a sweet taste to it though thanks to the incredible spice - BASIL! See? Who needs sugar when you can get basil?

This is a must-try sauce for your pasta night and I'm sure you will love it. If you are more of the spicy type of person, I highly recommend checking out other sauces that Botticelli has to offer. They are such good quality that I'm already planning on purchasing two more bottles of this amazing sauce.

Newman's Own Organics - Feel Good About Your Food Choices

I had the chance to try out a few items by Newman's Own Organics. Newman's Own was started by the famous actor Paul Newman who wanted to make the world a better place. You probably have seen his famous face not only in the movies but in some of your favorite items in the grocery store. What I love about Newman's Own is that when you purchase, a portion of the proceeds go to charity. So what did I have the chance to try? Well one of my guilty pleasures is chocolate. And one of the most amazing things that I've tried so far chocolate-wise by Newman's Own Organics is their organic chocolate cups! They come in so many amazing flavors including super dark chocolate raspberry, super dark chocolate peanut butter! I love the extra dark chocolate that is used with these amazing peanut butter cups, they make such a good little treat. Newman's Own also offers up Super Dark chocolate BARS. Those are good as well, and I love the variety of flavors, such as dark orange and espresso dark. My two personal favorites. Check out the chocolate by Newman's Own Organics here.

Also Newman's Own Organics offers up some great variety in dried fruit. I really enjoyed their dried apple slices - VERY much so. I complimented my lunch with it and it was that sweet taste that I sometimes crave without something being unhealthy. Pretty good combo, huh? They offer so many others as well, check it out here.

My personal favorite and one of the best things I was able to try was their olive oil and vinegar! Their oil comes in a dark green bottle, which I have read before is VERY good to purchase when purchasing olive oil. It has a gentle flavor and I add it to most of all the foods that I can - beans and rice, pasta, and things like that! Their vinegar is also very good (I tend to add it to my green beans and other veggies!) and it's such good quality.) Find out more details about their olive oil and vinegar here.

Gluten-Free Oatmeal Muffin Recipe & 3 Ways to Eat Right During Earth Month

Several months ago, I uncovered a tasty muffin recipe that I was extremely proud of and that I've been making ever since. Sometimes I will occasionally go a tad off script but this time, I disciplined myself to pay close attention to what I was doing and make sure that didn't happen, because I wanted to share it with you. So, as I shopped at my local Safeway in Tigard, I started to gather together the things I needed to make this recipe as healthy as possible.

Why? Well in case you didn't know, April is Earth Month! Some of my favorite brands are coming together to promote healthier choicese and I know you will want to select these items when you shop.

What you'll need for this most amazing recipe -

2 and a half cups of ground oats

1 cup and 1/3 of Soy Milk (suggestion: Almond Unsweetened Vanilla!)

2 TBSP of Butter (or Olive Oil)

2 TBSP of Cinnamon

1/2 TSP of cream of tartar

1/4 TSP of baking soda

1/2 TSP of Salt

1 large egg

1/4 cup of honey (I will let you be the judge of this; if you like muffins extra sweet, I would add a bit more! If you don't want them so sweet, I would use less). 

1 TSP of clovers (optional)

1/2 TSP of Vanilla Extract (optional)

Suggestion: Add mix-ins of your choice such as raisins, cranberries, dark chocolate pieces.


Preheat the oven to 350. I ground up the oats myself using a coffee grinder and then from there I measure out 2 and 1/2 cup of oats. I always start out with the dry ingredients first so add those in (except any added mix-ins), followed by the milk, the egg, the butter, and lastly the honey. Mix well. Then fold in your mix-ins last.

Spray the muffin tin with Pam spray or line it with muffin cups. Then pour the mix into a muffin tin. The consistency should be pretty thick. This batter should make 9 - 12 muffins.

Quick Hack! For me, when I'm distributing a muffin mixture into muffin tins, I like using an ice cream soup! Saves me from making a mess. 

Bake for 25 minutes.

NOTE: They do come out a bit small, but I've always been okay with this, because this is a largely gluten-free recipe and I'm not adding things such as guar gum (usually suggested in gluten-free recipes to make things puff up like regular gluten recipes).

These little muffins save VERY well so if you are interested in having these last throughout the week, I have done the same thing. Just bag up each muffin pair by pair and take them with you during the week!

Aside from eating healthier, what ways can you make the world a better place by shopping just a bit differently?

Here are three suggestions on how to change up your shopping list -

1) Change up Mac & Cheese night!

Do you serve up some tasty mac & cheese each week? It's seriously one of my favorite dinners. Well during this April Earth Month, consider selecting Horizon's Mac & Cheese. 2) Eat more fruit!

Personally, I really love frozen fruit, especially frozen berries. So while you are shopping this weekend, make sure you look out for Earthbound Farm Frozen fruits! I love adding frozen blueberries to my yogurt, but not only is this a healthy alternative, they do good for our planet. They currently have nearly 50,000 acres of certified organic farm land and sustainably farm and keep synthetic chemicals out of the environment.

3) Make morning coffee good for you - AND the planet.

If you had creamer to your coffee, consider a soy creamer like So Delicious. Not only is it healthy for you, but also So Delicious is enrolled in the non-GMO project's product verification program. I'm a huge supporter of NON-GMO products, so I'm loving this stuff.

5 Easy Ritz-wiches Perfect for Spring!

Snack time is upon us! As spring break draws to a close, and we embark on the last remaining portion of the school year before the blissful summer time, I think it's time to think about...SNACK TIME! I got inspired to think about some clever Ritz-wich ideas when I was shopping in my Portland Albertson's store.

There are some clever ways to stack it up with RITZ! So I wanted to share some really tasty spring time themed Ritz-wiches with you and hopefully give you some ideas to #stackitup for your next snack time!

The one that I recently learned about I always get rave reviews about when I serve it up is the Mango Salsa-Cream Cheese Ritz-wich.

Here's what you'll need -

Albertsons' Signature Farms Fresh Made Mango Salsa
Cream Cheese
Ritz Crackers

So take two Ritz crackers, slather one with some cream cheese, top it off with a bit of the mango salsa, and then STACK IT UP! Top it with your second Ritz cracker. VOILA. Some tasty snack time action for ANY TIME of the day.

I was thinking about some other flavor combos that just cry out SPRING TIME.

Here's a few others -

Sweet Bri Ritz-wich

I discovered this amazing combination recently and it's also another snack that gets rave reviews!

What you need -
Raspberry Preserves
Brie Cheese
RITZ Crackers - OF COURSE!

Easy and simple recipe - simply spread a little raspberry preserves onto your Ritz cracker. Slice of a small piece of brie cheese. You can have it as an open faced Ritz-wich or top it off with another Ritz to make it a complete Ritzwich. Either way, I'm convinced you will enjoy it.

Pepper Jelly & Cheese Ritz-wich

What You'll Need

Tabasco Pepper Jelly
Cream Cheese
Ritz Crackers

This is also a really good combination. The pepper jelly isn't as hot as you may think, more sweet with a bit of a kick. So top your Ritz cracker with cream cheese and then dollop a bit of pepper jelly on top. VOILA! And awesome RITZ-wich for your snacking delight!

PB & Cranberry Ritz-WICH.

What You'll Need

Peanut Butter
Dried Cranberries
Ritz Crackers

Spread on a layer of peanut butter on your Ritz cracker. Top it off with a few dried cranberries. I suggest having this one open-faced!

And my last one -

Turkey Club Ritz-WICH
Turkey Slices
Bacon (cut up, already cooked)

There is so much potential for amazing when you are working with Ritz crackers! This one is perfect for snacks for a small gathering, just cook up some bacon first. First dollop some mayo onto a cracker and take a small piece of bacon and fold it up into the turkey and then put it on top of your Ritz cracker. Top it off with another Ritz and you have a turkey club Ritzwich!

What I love about putting together great snacks like these is that everyone will want to join in on this action! And that's bringing everyone together and I think that's really awesome. That's what Ritz does! It's bringing us all together.
